The story of Saint-Rémy
Brewing at the Abbaye Notre-Dame de Saint-Remy in Rochefort is documented as far back as 1595. The Trappist brewery is famously private, releasing its 6, 8 and 10 with almost no marketing.
Rochefort draws the water for every batch from a well within the abbey walls.
