The story of Notre-Dame d'Orval
The Abbey of Orval traces to 1132, though the modern brewery dates to 1931, built to fund the abbey's reconstruction after centuries of ruin. Its dry-hopped, Brettanomyces-fermented ale is unlike any other Trappist beer.
Orval brews essentially one beer for the public, and it keeps evolving in the bottle thanks to wild yeast.
