The story of Cantillon

Founded in 1900 in the Anderlecht district of Brussels, Cantillon is the standard-bearer for traditional lambic. It ferments spontaneously with wild yeast carried on the Brussels air and ages its beer in oak.

Cantillon only brews in the colder months, when the wild yeasts of the Senne valley behave.
