The story of Fantôme
Dany Prignon has run this one-man Ardennes brewery at Soy since 1988, and it is the least predictable operation in Belgium. Fantome saisons change from batch to batch by design, built around whatever herbs, spices or fruit the brewer decides on, so two bottles of the same beer can differ noticeably.
The batch-to-batch variation is deliberate rather than sloppy, which makes Fantome either the most exciting or the most frustrating brewery in Belgium depending on who you ask.

Saison · 8% ABVA cult farmhouse ale from the wonderfully unpredictable Fantôme brewery in the Ardennes. Famously batch-variable, it is golden, lively, and complex, with peppery yeast, citrus, herbal notes, and an idiosyncratic funk that has made it legendary among saison lovers.
