Can age. Will soften and gain a honeyed depth, though it is lovely fresh too.
"Stands up to roast pork, rich poultry, or a creamy cheese; serve cool in a tulip or chalice."
Cook this: a wedge of aged abbey cheese (Chimay, Orval), vol-au-vent (chicken in puff pastry), or roast pork with grain mustard.

Van Honsebrouck's tripel, bottle-refermented and pouring a clear honey gold. It carries the classic tripel signature of banana and clove with a mild, fragrant hop bitterness, but at eleven percent the warmth and gentle spice of the finish reveal its strength. One of the flagships of the castle-themed Kasteel family from Izegem.
On the Tripel style, Strong, golden-colored ale. Complex spiciness, fruity esters (banana, orange), and a sweet malt backbone masked by high carbonation and a dry finish.

Pour it into a tulip, served around 8-12°C, and let its aromatics open before the first sip. Lovely now, though a year or two will only soften and deepen it.
