3 Fonteinen Oude Geuze
Brouwerij 3 Fonteinen

Brouwerij De Troch • Flemish Brabant Belgium
From a farm brewery at Wambeek whose brewing records run back to roughly 1795, which makes De Troch a strong claimant to the title of oldest lambic brewery still working. The Cuvée is its traditional unsweetened gueuze, a world away from the Chapeau fruit lambics the brewery is better known for abroad.
Sharp, sparkling and complex, with notes of citrus, hay, musty, finishing crisp and dry.
Serve at 6-8°C in a lambic glass to maintain a generous head and let the aromas bloom.
6-8°C

Ages for years. Oak-aged and acidic, it deepens and mellows over a decade or more.
"Good with a simple roast chicken or a young goat cheese; the dryness resets the palate between bites."
Cook this: creamy brie or fresh chevre on toast, a wedge of aged abbey cheese (Chimay, Orval), or vol-au-vent (chicken in puff pastry).

On the Gueuze style, The "Champagne of Brussels". A blend of young and old lambics, bottle-conditioned. Intensely dry, sour, cider-like, and highly carbonated.

Pour it into a lambic glass, served around 6-8°C, and let its aromatics open before the first sip. Patience rewards this one: a few years in the cellar will round it into something deeper.
