Story & Heritage

ABOUT THIS BEER

Stille Nacht, 'Silent Night', is De Dolle's Christmas prestige beer and one of the most celebrated strong ales in Belgium. Boiled for many hours and brewed with white candi sugar to a towering twelve percent, it is built to be cellared: the brewery keeps a sample of every bottling, and the beer rewards years of patient aging.

On the Belgian Strong Golden Ale style, Deceptively drinkable strong ale. Pale color, high carbonation, and fruity/spicy yeast notes. Similar to Tripel but often lighter in body and drier.

THE MONK'S NOTE

Pour it into a tulip, served around 8-12°C, and let its aromatics open before the first sip. Lovely now, though a year or two will only soften and deepen it.
